It’s no secret that I love a good picnic, and I really enjoy experimenting with different sorts of food to take on them, but sometimes you just can’t beat a sandwich. Fresh bread, around crisp lettuce, tart tomato, sharp cheese… sandwiches are practical, yummy, and so wonderfully nostalgic. I’ve come a long was since my days as a Vegemite and butter girl, so I thought in today’s post, I’d share some of my go-to’s with you.

Egg and Lettuce
Egg and lettuce is such a tried and true favourite. I always got excited when I had one in my lunchbox. This egg mixture in this version is just a little bit more special.
Makes 2 sandwiches
4 slices fresh bread
4 eggs
1 tbsp chopped dill
2 heaped spoons of greek yoghurt
1 heaped spoon of mayonnaise
1/2 tbsp Dijon mustard
Salt and Pepper to taste
4-8 large cos lettuce leaves or watercress
- Half fill a small saucepan with water and bring to the boil on a stovetop. Add the eggs, boil for 15 mins. Meanwhile, prepare a bowl with iced water. After 15 mins, remove the eggs from the stove, drain off the boiling water, and drop your eggs into the iced water. After 5 mins, you should be able to easily peal the shells off your eggs.
- Roughly chop the eggs, and drop into a bowl with the dill, yoghurt, mayonnaise and mustard. Use a folk or a masher or mix everything together. Add salt and pepper to taste.
- Shread your lettuce if you’d like- I prefer to keep mine in whole leaves as it holds better in the sandwich.
- Spread half the egg mixture on two of the slices of bread. Top with lettuce leaves. Enjoy!
Hummus, Avocado and Tomato Sandwiches
I started making this sandwich after seeing a similar one on Instagram, and it instantly became a favourite. The flavours are bold and sharp.
Makes 2
4 slices fresh bread
2 tsp mild English mustard
2 tbsp hummus
1/2 large ripe avocado
8 thin slices of Truss tomato
About 70g of grated extra tasty Cheddar cheese
- Lay out 2 slices of bread. Divide the English mustard in half and spread a thin layer on each slice of bread. Mustard can be a very overpowering flavour, so you really only need a very thin layer.
- Use an butter knife to gently mash the avocado within the skin. Divide evenly between the 2 slices of bread and spread on top of the mustard. Set aside.
- Lay out the remaining 2 slices of bread. Spread 1 tbsp of hummus on each piece. top with grated cheese and sliced tomato.
- Top with the avocado/mustard bread. Enjoy!
Green Goddess Sandwich
If you love herbs and aren’t afraid of more sophisticated flavour combinations, you can’t go past a Green Goddess sandwich. I’ve made this in salad form many times as well, it’s just so good.
Makes 2
4 slices fresh bread
3 tbsp finely chopped basil leaves
3 tbsp finely chopped tarragon leaves
3 tbsp finely chopped chives
1 large garlic clove
zest of 1/2 lemon
Squirt of lemon juice
1/4 cup mayonnaise
Salt and Pepper, to taste
1/2 large ripe avocado
1x125g ball fresh mozzarella
8 slices of green heirloom tomato
8 thin slices of cucumber (slice diagonally for bigger pieces)
A handful of sprouts (such as broccoli or snow pea), OPTIONAL
6-8 cos lettuce leaves
- In a bowl, combine the herbs, garlic, lemon and mayonnaise. Season with salt and pepper to taste.
- Lay out your slices of bread. On two of the slices, spread the herbed mayonnaise mixture. On the other 2, spread the mashed avocado.
- Top the avocado with cucumber, heirloom tomatoes, mozzarella, sprouts if using, and lettuce.
- Add the other slice of bread, mayonnaise side down. Enjoy!
